Executive Chef Luxury Boutique Hotel Caribbean
Fantastic opportunity! Small Boutique Hotel in the Caribbean New Opening
Superb opportunity to manage and launch the new Hotel operation and restaurant in this idyllic location!
Executive Chef:
Reporting to the Hotel Manager, you will help launch this new 60 cover restaurant
Manage all aspects of the restaurant
Excellent organizational and leadership skills required
Experienced in managing and launching a new opening project ideal
Boutique Hotel experience
Salary up to £40,000 GBP per year (dependent on experience) plus benefits
Accommodation provided
The Role:
Menu development
To embrace the 14 day menu cycle
Manage food and labour costs, analysis and standards
Training and development of all kitchen staff, chefs and others
Manage all food and wine procurement
Be the supplier interface and maintain the standards management
Working Environment:
Fast paced and high pressure
High profile - direct customer interface from the open kitchen
Two kitchens: event Kitchen, within the main dining area and prep kitchen on ground level
Restaurant open 7 days a week
Tropical conditions
Restaurant is a exclusive design set within a unique big nature setting
24 Hour operation
Candidate Requirements:
Culinary qualifications
Certificates Food Handling HACCP
10 years minimum, with executive chef experience and ideally start up experience
Proven track record of fine dining kitchen experience
Experience of working overseas
Strong communication skills, verbal and written
Resourceful & resilient under pressure
A True Foodie great knowledge of all aspects of food and wine
Thrives in a dynamic environment
